BBQ Fried Rice

When I'm not eating BBQ, I'm eating Asian food. So why not combine my two favorite foods? Our family loves fried rice and we love to cook outside on a griddle. It's a great way to get your kids involved too as mine love cooking this with me.

You will want to start with day old rice which you will boil the day before and dry out in the fridge overnight. It keeps the rice from being sticky and clumpy. I've tried this with freshly boiled rice and do not like the final product as much. You can incorporate any BBQ you like into this fried rice. Pork Belly pairs the best IMO, but brisket is also great. Or go with traditional grilled chicken, steak or seafood if you like.

Ingredients
  • 4 C Boiled Jasmine Rice
  • 2 C cooked BBQ (we used pork belly burnt ends in the video above)
  • 4 eggs
  • 3 - 4 oz Sesame Oil (to taste - watch the video above)
  • 3 - 4 oz Soy Sauce (also to taste)
  • Meat Church Holy Voodoo to taste
  • 1/3 C scallions, diced
  • 1 stick butter, sliced for sautéing 

Prepare your Griddle
Prepare your griddle at medium heat. We used a temperature of 325 degrees on our Loco Cookers griddle.

Prepare the rice
Boil 4 cups of jasmine rice. Allow to cool, spread on a cookie sheet and place it in your fridge for at least 6 hours to dry out. I dry mine out overnight.

Fry the rice
Lay down several pats of butter. Once melted, pour the rice over the butter. Pour the soy sauce and sesame oil all over the rice. Mix it up and combine it with a long spatula. You will ultimately fry this rice for 12 - 15 minutes. 

Re-heat & incorporate the BBQ
While the rice is frying, reheat the BBQ on the griddle. I used about 2 cups of pork belly that I diced into pretty small pieces. You will combine with the rice at the end of the cook once it is reheated.

Fry the eggs
About 7 minutes into the frying the rice, melt some more butter and crack 4 eggs in that butter on the griddle. Season with our Holy Cow or Holy Voodoo. Chop the eggs up with your spatula to scramble. Once the eggs are cooked combine with the rice.

Combine it all and complete the rice
Season the rice with Meat Church Holy Voodoo. You could substitute salt, but I like a more complex flavor that Holy Voodoo gives you. Taste a bite of the rice to see if you like the levels of the Voodoo, soy sauce and sesame oil. Add more to taste if needed. 

Add the BBQ & scallions.

Remove from the griddle, allow to cool and enjoy!
