I took a bunch of crappie I caught recently and made some crappie ceviche at my fishing crazed buddy Bryan's recommendation. I make ceviche often with shrimp and but had never done it with fresh water crappie. Crappie is my favorite fresh water fish, so I was willing to try it. Boy am I glad we did!

Ingredients- fresh crappie filets, chunked1/2' - 1"
- 10 - 12 limes, juiced
- 4 jalapeños, chopped
- 2 garlic cloves
- Holy Voodoo and\or kosher salt to taste
- 1/2 red onion, diced
- 1 roma tomato, diced
- 1 avocado, diced
- 5 sprigs cilantro, finely chopped
Place crappie into a glass bowl and cover completely with fresh lime juice.
Press garlic into the bowl and stir.
Add salt and half the jalapeños and stir.

Cover and place in the fridge for 6 - 8 hours.
Strain the lime juice.
Add onion, tomato, cilantro and avocado.
Stir gently.
I served these with fresh @heb sea salt tortilla chips.
