Dayne and Ashley Weaver are amazing friends and make amazing BBQ in Aledo, TX. They also have a burger on their menu. This recipe yields 6 double-burgers

Ingredients:

  • 2 1/2 lbs of brisket trim
  • 1/2 lb of fat
  • 1 large egg
  • 6 brioche buns with sesame seeds
  • 6 slices, white American cheese
  • 6slices, yellow American cheese
  • 1 stick butter, melted
  • 2 garlic cloves
  • Meat Church BLANCO to taste (sub S&P)
  • Red onion, sliced thinly
  • Your favorite burger condiment. We love the sauce in this recipe.

Tools

  • Meat grinder
  • Burger press (sub heavy skillet)
  • Parchment or wax paper

Prepare the burger meat
Grind the brisket trim and fat together into a large bowl.

Crack an egg into the mix.

Combine and knead the mix by hand thoroughly.

Roll into 12 equal sized balls.

Prepare the griddle
Prepare your griddle or heavy cast iron pan over medium-low heat. In this video we used a Traeger Flatrock griddle. 

Melt 1 stick of butter in a butter melter or bowl. Add 2 crushed cloves of garlic to infuse.

Toast the buns
Pour some of the melted garlic butter on the griddle.

Add sets of buns to the butter and toast until you have a golden brown crust.

Set aside to cool and firm up.

Pro tip: Do not build a burger on a hot bun.

Cook the burgers
Increase the griddle temp to high. Get the metal smoking to help create a great crust.

Place 2 balls on the griddle. Cover each with parchment paper and press it down with a burger press for 6 - 8 seconds.

Remove the press and paper.

Season with Meat Church BLANCO.

Cook the patty 85-90% through on one side. 

Flip. Add a piece of white American cheese to one patty and add yellow American to the 2nd patty.

Stack the one patty on the other. Cook until the cheese on the top patty looks glassy and is melted. 

Build the burgers
Remove the double stacked patty from the griddle and place on the bottom bun.

Drizzle with your favorite burger sauce. The sauce in this recipe makes a great substitute for Dayne's proprietary Loven sauce.

Add 2 thinly sliced red onions. Add the 2nd bun.
