Kalbi Beef Ribs are my absolute favorite thing to grill over charcoal. We couldn’t think of a better first cook on our brand new Meat Church Briquette Charcoal than these. Kalbi ribs are an easy weeknight meal that you can marinate the night before and have them ready to throw on the fire the next day and will cook it only a few minutes.

Ingredients
- 5 pounds Korean style beef short ribs
- 1 cup brown sugar
- 1 cup soy sauce
- 1/2 cup water
- 1/4 cup mirin
- 1 white onion, grated
- 1 Asian pear, peeled and grated
- 4 tablespoons minced garlic
- 2 tablespoons sesame oil
- 1/4 teaspoon black pepper

Meat Church Blanco to desired taste
- Scallion (for garnish)
Make Your Marinade

Add soy sauce, water, mirin, grated onion, grated Asian pear, minced garlic, sesame oil, and black pepper to a mixing bowl and whisk until combined.

Place the ribs and excess brown sugar into a vac seal bag (we needed 2 bags). Evenly distribute your marinade mixture between the two bags and seal with your vacuum sealer.
Note: If you do not have a vacuum sealer, you can marinate in any food safe container.
Place in the fridge overnight

Cook the Ribs
Remove your marinated meat from the fridge and take out of vac seal bag or container.

Season the ribs lightly with Blanco.


Serving it up!
Lay the cooked ribs over the top of a bed of white rice and top with fresh scallion.
Serve and enjoy with a cold EIGHT beer!
