Mexican Chicken Wings
You have probably watched our "Mexican series" where we have made our savory  "Mexican Pulled Pork" or famous "Mexican Grilled Chicken Sandwich." The name came from a late friend who used similar flavors in a recipe of his that he cooked in the pork category at the American Royal. To some, it's not all that "Mexican" but to everyone, it is delicious! Since its tailgating season, we thought I'd add in a new recipe to this technique - Mexican Chicken Wings.

Ingredients
  • 2 lbs Chicken Wings (12 - 15 wings)
  • 1, 26oz canned pickled jalapeño peppers (La Costeña)
  • 1 stick unsalted butter
  • 8 oz Cholula hot sauce
  • Meat Church Dia de la Fajita seasoning to taste

Tools

  • Vacuum Seal Container or Bag 

Marinate the chicken wings
Add both the chicken wings and the entire can of pickled jalapeño peppers into the vacuum seal bag (or any food safe container you prefer).

Marinate for 4 hours. Adjust the time to your desired level of spiciness (extending marination time could be too spicy for children).

Prepare your grill
Prepare your grill for medium to high heat direct grilling. In this video we used a Mill Scale Yakitori II grill with lump charcoal, but you can use any type of cooker that you like.

Prepare the chicken wings
Remove the chicken wings from the marinade. Pat dry. Season on all sides with Meat Church Dia de la Fajita seasoning.

Allow to adhere for at least 15 minutes.

Cook the chicken wings
Place the chicken wings on the grill. Flip and move the chicken around the cooking grates constantly to get good char while cooking each piece evenly.

Prepare the basting mixture
Melt the stick of butter and mix in your desired amount of hot sauce. In this video we used around 1/4 of the 12 ounce bottle of Cholula.
Baste the chicken constantly with the butter and hot sauce mixture.
Grill Chicken Wings
Cook the chicken to at least 165 degrees. I generally cook them anywhere between 190-200 degrees to get that nice char and crispiness. Continue to cook the wings until your desired doneness and remove from the grill.
