Stuffed Bell Peppers are a classic weeknight meal. If you like those, wait until you try this kicked up version of Roasted Sloppy Joe Stuffed Bell Peppers! Homemade sloppy joes are easy to make are delicious, and take the flavor of this classic dish to a whole new level. This stuffed peppers recipe would also be a great use for all that wild game ground meat that you have in your freezer.

- 4 Bell Peppers, sliced in half lengthwise
- 1 lb Ground Beef (sub ground venison)
- 2 T Olive Oil
- 1 Medium Yellow Onion, chopped
- 1 T Tomato Paste
- 3 Clove Garlic, Minced
- Meat Church Holy Cow to taste
- 1 C Tomato Sauce
- 1/3 C Ketchup
- 1 T Worcestershire Sauce
- 1 T Apple Cider Vinegar
- 1 T Brown Sugar
- 1 C Monterey Jack Cheese
- Garnish
- Shredded Chopped Green Onions
Prepare your direct grill over 350 degrees. We used a Traeger Timberline XL with hickory pellets in this video, but honestly any flavor pellet would be fine for this hight heat cook.
Add the oil to a heavy pan over medium heat. Cook the onion until translucent. Add in the garlic and tomato paste. Cook until fragragant which should take 2-3 minutes.
Stir in the ground beef and season with Meat Church Holy Cow. Cook until browned which will take 6 - 8 minutes. Â
Reduce the heat to low. Stir in the Worcestershire sauce, tomato sauce, kethcup, apple cider vinegar and brown sugar. Simmer until slightly thickened. Set aside to cool a bit.Â
Lay the bell peppers flat. Stuff with the homemade sloppy joe mixture.
Top with cheese.Â
Place the peppers directly on the grill grate.
Cook until tender which took 40 minutes in this video.
Remove the peppers from the grill, allow to cool and garnish.
