
The 0 - 400 degree chicken wing method is a simple method to cook somewhat smoky, but crispy chicken wings. This method is where you place wings on a pellet grill while it is off, set it to 400 and cook them. We add a few additional tricks to get crispy, evenly cooked wings in this video, and the result is a wing that is worth of being in your cooking arsenal!

Ingredients
- Chicken Wings
- Meat Church Hail Mary BBQ Rub (sub your fav BBQ rub)
- Meat Church Holy Cola BBQ Sauce (sub your fav bbq sauce)
Dry the skin on the wings
This step can be considered optional, but it is critical in my opinion.Â
Rinse and dry off the chicken wings completely with a paper towel.Â
Place them on a wire rack and in the refrigerator for at least 12 hours. This will help dry this skin which will lead to a crispier chicken wing.
Prepare your pellet grill
Prepare your pellet grill. We used a Traeger with Meat Church pellets (oak\hickory) in this video, but most pellet such as mesquite, hickory or pecan would also be good choices for such a hot and fast cook.
Prepare the wings
Season the wings on all sides liberally with Meat Church Hail Mary.

Allow the seasoning to adhere for 15 minutes. Place the wings on a wire rack.Â

Cook the wings
Place the wings in the pellet grill.Â
Turn the grill on and set it to 400 degrees and ignite it.Â
After 30 minutes, flip the wings. At 30 minutes in this video the wings were 162.Â
Also rotate the wings as necessary if you are noticing any wings that are cooking faster than others due to hot spots.Â
Continue to cook the wings until they are at your desired doneness. Although chicken is completely cooked at 165 internal, I prefer to take my wings to closer to 200 to crisp them as much as possible.Â
Remove the wings from the pellet grill. Place in a metal bowl.Â

Toss with Meat Church Holy Cola BBQ Sauce.Â

Place the wings back in the pellet grill for 5 minutes to tack up the bbq sauce.

Remove, allow to cool and enjoy with some of our homemade ranch!
